Lebanese Pita Bread

Ingredients
- 1 sachet dry yeast
- 1 tsp white sugar
- 1 1/4 cup warm water
- pinch salt
- approx 3.5 cups plain flour
Instructions
- Place one sachet of dry yeast into a bowl.
- Add about one teaspoon of white sugar.
- Add 1 1/4 cups of warm water.
- Whisk to dissolve the yeast and sugar.
- Let it sit for about 5 minutes for the yeast to activate (it should start to bubble).
- Add a pinch of salt to the activated yeast mixture.
- Add 2 cups of plain flour to the bowl.
- Using your fingers, start to mix the flour into the wet ingredients.
- Once the first two cups of flour are worked in, add another cup of plain flour and work it through.
- Add another 1/4 cup of flour and keep mixing until you end up with a nice smooth dough ball that stops sticking to the bowl.
- Place some flour on a board or work surface.
- Bring the dough ball out onto the floured surface.
- Knead the dough for about 5 minutes, folding it over, rolling it around, pushing and pulling it until it's smooth.
- Place a bit of flour into the bowl and put the dough ball back into the center.
- Cover the bowl with cling wrap and place it in a warm place for about 45 minutes, or until the dough has doubled in size (it may take between 30 minutes to an hour depending on the weather).
- Take the proofed dough out of the bowl and place it onto a floured surface.
- Quickly knead the dough again.
- Divide the dough into 8 pieces by cutting it in half, then in half again, and then each piece in half again.
- Ensure your surface is constantly floured.
- Take one piece of dough and tuck, push, and roll it in your hands to form a nice round ball.
- Flatten the dough ball down on the floured surface.
- Using a rolling pin, roll out the dough as thin as you can. It doesn't need to be perfectly round.
- Preheat your oven to about 260°C (500°F).
- Place the rolled-out pita dough onto a round pizza tray.
- Bake the pita bread in the preheated oven for about 5 minutes, or until it puffs up and forms air pockets and gets a nice brown color.
- Remove the baked pita from the oven and set it aside.
- Continue to roll out and bake the remaining dough pieces, flipping the tray over if needed for even baking.
